Considering my last super simple jacket potato post has had a record number of hits over the past few months, here’s another recipe:
This was dinner last night:
Jacket Potato: Scrubbed and baked at 200c for two hours.
Swede: Peeled and chopped, boiled for 30 minutes.
Baby Brussels Sprouts: Peeled, Chopped, Sauteed for a minute then lightly boiled.
Kidney Beans: Tinned, washed.
Toppings: Salt and Sunflower oil. I put lots of oil and salt inside the potato, I can then almost imagine that it’s melted cheese!
Results: Totally YUMMY dinner. The two year old had “4ths” of swede and the five year old had “3rds” of Brussels. “Can I have some more brussels sprouts pleeeeeease?”…is music to my ears.
